Slow Cooker Banana Nut Oatmeal

What' s better then waking up on a chilly fall morning to a house filled with the scent of cinnamon and vanilla? This week I am sharing another slow cooker favorite of mine. Banana Nut Oatmeal. This takes about 5 minutes to put together the night before and serves 4.

Slow Cooker Banana Nut Oatmeal *

Ingredients

  • 1 cup steel cut oats

  • 1 ripe banana

  • 1/4 cup chopped walnuts

  • 3-4 cups unsweetened almond milk (depending on your desired consistency)

  • 2 tablespoons ground flax seed

  • 2 tsp cinnamon

  • 1 tsp vanilla

  • 1/2 tsp nutmeg

  • 1/2 tsp salt

  • 2 tablespoons maple syrup

  • banana slices, walnuts or brown sugar - optional garnish

Instructions

  • Place all ingredients in slow cooker and stir until well combined.

  • Cook overnight on Low for 8 hours.

  • In the morning, stir oatmeal with a fork to loosen the steel cut oats and make sure everything is fully incorporated.

  • Serve warm with banana slices, chopped walnuts or a pinch of brown sugar.
