Slow Cooker Banana Nut Oatmeal
What' s better then waking up on a chilly fall morning to a house filled with the scent of cinnamon and vanilla? This week I am sharing another slow cooker favorite of mine. Banana Nut Oatmeal. This takes about 5 minutes to put together the night before and serves 4.
Slow Cooker Banana Nut Oatmeal *
1 cup steel cut oats
1 ripe banana
1/4 cup chopped walnuts
3-4 cups unsweetened almond milk (depending on your desired consistency)
2 tablespoons ground flax seed
2 tsp cinnamon
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp salt
2 tablespoons maple syrup
banana slices, walnuts or brown sugar - optional garnish
Place all ingredients in slow cooker and stir until well combined.
Cook overnight on Low for 8 hours.
In the morning, stir oatmeal with a fork to loosen the steel cut oats and make sure everything is fully incorporated.
Serve warm with banana slices, chopped walnuts or a pinch of brown sugar.
