In this week's blog, I wanted to share with you a super simple, yet refreshingly delicious Tomato Basil salad made from the bounty of my summer harvest. All you do is grab some garden fresh tomatoes and a handful or so of garden fresh basil. You slice up the tomatoes and julianne the basil. Put the tomatoes on a plate or platter first, then sprinkle the julianned basil over the tomatoes, drizzle some extra virgin olive oil and some balsamic vinegar over the top, and presto! You have a wonderfully nutritious and fresh salad to serve along side any meal. The bonus is that tomatoes are loaded with lycopene, vitamin C and biotin, and are great for your bone, and heart health, along with having anti cancer properties.
So go pick some tomatoes, or grab some at your local farmer's market for a yummy nutritional boost!
